Lately, I have the feeling that the days are flying. Time is so easily wasted. I come home from work and immediately after it’s time to go to bed. I still cook and bake, but all of these creations barely make it to my food blog. 🙂 For that reason, I grasped at my folder “not yet published recipes” and realized that I made a lot of nice stuff that is waiting to see the light of the day. I start with the Chocolate Chip Cookies… 🙂
Ingredients
- 250 g unsalted butter, softened
- 180 g brown sugar
- 1 vanilla bean, seeds scraped
- 2 eggs
- 350 g all-purpose flour, sifted
- 1 teaspoon baking powder, sifted
- 200 g dark chocolate, chopped
Recipe
Preheat oven to 180°C. Put the butter, sugar and vanilla in the bowl and beat with mixer until pale and creamy. Add the eggs one by one and mix after adding each. Fold in the flour combined with the baking powder and mix until a smooth dough forms. At the end, fold through the chocolate. Roll two tablespoons of the mixture into balls and place them on the baking tray covered with a baking paper. Leave enough space between the balls since they will flatten while baking. Bake for 12-15 minutes and allow to cool on the trays before transferring them to a box. They are best when they are still warm and the chocolate is still soft and nicely captured in the crunchy dough.
