This is one of my old recipes, which was sitting in my drawer for a while. A very simple but mild-flavoury add-on to afternoon tea, similar to a previously published recipe, but sweeter. 😉
Ingredients
- 300 g all-purpose flour
- 1 teaspoon baking powder
- 1 pinch of salt
- 100 g icing sugar
- 150 g butter
- 2 egg yolks
- seeds of 1 vanilla pod
- zest of 2 mandarins
- mandarin jam
Recipe
Combine all ingredients except for the jam and form a ball of dough. Wrap in cling film and leave it in the fridge for one hour.
Once chilled, roll-out the dough to 3-4 mm thick and cut out shapes of your choice (circles, flowers, etc.). Transfer the cookies on a baking tray and bake the cookies for 10 minutes at 160 degrees. It is important that they stay white and don’t burn on the edges. Let them cool down on the baking tray.
Once cold, stick two cookies together by adding some jam between them. Press gently and the jam will spread evenly.
