Juicy and crispy scallop on lovely tender lentils leek salad will give you a perfect starter. Or even a whole meal. Try it out! 😉
Ingredients
- 100 g fresh leek
- 100 g red lentils
- 1/2 teaspoon salt
- 4 big scallops
- 4 slices smoked ham
- A pinch of pepper
For the salad dressing:
- 1 teaspoon mustard
- 1 tablespoon wine vinegar
- 2 tablespoons olive oil
- 1/2 tablespoon fine chopped thyme
- Salt and pepper
Recipe
Cook half a liter of water in a big pot. Cut the leek in thin slices and add it together with the lentils into the boiling water. Let it cook for 5-6 minutes by stirring once in a while. Drain it and put aside.
For the sauce combine all ingredients and add it to the prepared leek and lentils, cover it with a piece of clear film and let it stand for 30 minutes.
Flavor the scallops with salt and pepper. Wrap the smoked ham around each scallop and fasten it with a toothpick. Heat some olive oil in a non-sticky pan and fry the scallops for 3-4 minutes from each side. After frying you can remove the toothpick.
Arrange a portion of leek and lentils salad on a plate, put the scallop on top and sprinkle with chopped fresh thyme.
